Old Fashioned Soft Pumpkin Cookies

You’ll love these old fashioned soft pumpkin cookies, just like Grandma made! It’s officially the first day of fall, and I am so excited! I have already been apple picking once this year, but my family is headed back to the orchard again tomorrow. Our local orchard has so many activities going on all the time, that we visit a few times before the season is over. In addition to their bountiful supply of apples and pumpkins, they have squash and flowers available for picking. Yesterday, on a whim, I made White Chocolate and Peanut Butter Wheat Thin Cookies, and they were fantastic! My husband tried them when he came home from work, and he said “You have to take this bag away from me, or I’m going to eat them all.” They are seriously addictive! As I was browsing Pinterest last week, looking for a fun Christmas cookie recipe, I came across these adorable Gingerbread Men Cookie Sticks.  I instantly fell in love with them, and wanted to make them.  My husband, however, is not a fan of gingerbread flavor, so I decided to make sugar cookie sticks instead, and turn them into snowmen instead of gingerbread men.  I did another search on Pinterest for sugar cookie sticks, and found this recipe for Valentine’s Cookie Sticks.  It was the perfect base I needed for my Snowman Sugar Cookie Sticks. I have enjoyed I Can’t Believe It’s Not Butter® for a long time.  I used to spend a lot of time at my grandmother’s house when I was a kid, and she always had I Can’t Believe It’s Not Butter in her fridge.  It had a rich, buttery flavor that I loved.  My favorite of their products was the spray bottle, which was really easy for me to spray on bread, muffins, corn on the cob, or anything else really.  When you’re a kid, using a knife can be a bit of a challenge, so I thought the spray bottle was extra cool.  I participated in an Influencer Activation on behalf of Mom Central Consulting for Katy’s Goodness. I received samples for this review and a promotional item to thank me for participating. Several of my family members are military veterans.  My grandfather served in the Army during the Korean War, my Uncle served in the Army during Desert Storm, my cousin served in the Air Force in both Iraq and Afghanistan, and another uncle of mine served in the Navy for more than 20 years, and was aboard the ship that rescued Captain Phillips!
