Cheese boards are a popular appetizer choice during the busy holiday season, and it’s easy to see why. I mean, who doesn’t love cheese?! Cheese boards are so great because they are really easy to put together. You just get a bunch of your favorite cheeses and finger foods, arrange them on a board, and call it a day. It’s a nice way to offer your guests a lot of variety, without a whole lot of effort on your part, and you don’t have to worry about dirtying up a whole bunch of dishes either.

When making cheese boards, people usually tend to load them up with a whole bunch of carbs – slices of crusty bread, crackers, bread sticks, etc., and lots of sugary fruits like grapes and figs. While those foods are delicious, they can be an unwelcome temptation to people who are trying to watch their weight, or for people with certain medical issues. This holiday season, I decided to offer my guests a low carb cheese board instead.

How to Make a Low Carb Cheese Board

My low carb cheese board starts off with some delicious cheese, of course! I love Stella cheeses. They are so flavorful, and really quite reasonably priced. That makes it easy to pick up a few different varieties to please all of my guests. I also like the fact that I don’t have to go to a fancy cheese store to find them, as they are available at Walmart and my local grocery store. They have quite a large selection of cheeses (16!!) to choose from, too, which is great. I chose four different varieties of Stella cheese for my cheese board – Parmesan, Romano, Asiago and Italian.

The Parmesan and Romano are both hard cheeses, so I decided to use them to make some cheese crisps in place of crackers. All you have to do to make these is shred the cheese with a grater, lay it out on a paper plate, top with any seasonings you want and pop it in the microwave for one minute. Let them cool for another minute, remove from the plate, and they will crisp right up! You can also make these in the oven by laying the cheese out on a sheet pan covered with parchment paper and cooking for 5-6 minutes at 400 degrees.

I made plain Parmesan, rosemary Parmesan, black pepper Romano and crushed red pepper Romano cheese crisps. They came out so good, and I loved the flavor of all of them! They have a really nice crunch to them, and your guests will never miss the crackers!

I see a lot of people just stick a big hunk of cheese and a knife down on their cheese board, and that always bothers me. My guests did not come visit me to have to work for their food! It’s fine to do that with soft cheeses that are more suited for spreading, but I like to cut my firmer cheeses up into bite-sized pieces so guests can just pop them onto their plate or in their mouth, and not spend time cutting up their own cheese. It just makes things flow better too, when people are lined up to get their food.

I added four different meats to my cheese board – ham, hot capicola, prosciutto and pepperoni. Just have your deli slice these thin, then roll them up tightly and place them on your board.

Instead of loading up my cheese board with a bunch of sugary fruits, I loaded it up with a selection of low carb vegetables. These pepperoncinis, Mediterranean mushrooms, olives, pickles and banana peppers have a lot of flavor and perfectly compliment the meats.

Your guests will have fun experimenting and trying out new flavor combinations. I love pepperoni and a banana pepper on a black pepper cheese crisp!

If you want to add some fruit to your low carb cheese board, berries are a good option. I added a few strawberries in, as they are not terribly high in sugar and they bring a little pop of color and freshness to the cheese board.

Finally, I added some almonds to my cheese board. Guests always love to snack on nuts, but some nuts like cashews and chestnuts are high in carbs. Almonds, Brazil nuts, Macadamia Nuts, peanuts and pecans are all great low carb options to add to your cheese board.

My kids are both showing a lot of interest in Christmas this year, so I’ve been researching fun advent calendar ideas for kids. Cranberry is such a wonderful fall and winter flavor. I look forward to that fresh, tart flavor every year. Most people only think about canned cranberry around the holidays, but there are so many awesome cranberry desserts that can be made, too.

It’s football season again, and I’m so excited to share a couple of quick and easy game day recipes with you! My friends and family love football, and we are from New England, so I bet you can easily guess who our favorite team is.

When I have company over to watch the game, I don’t want to spend the whole time in the kitchen slaving over the stove. I have two toddlers, so I am already busy enough tending to them, without adding extra work. I want to be able to relax, watch the game, and spend some quality time with my friends and family.

I keep our game day gatherings pretty low key. I don’t go all out with decorations and fancy food with crazy ingredients and lots of steps. I’m on a pretty strict budget and I just don’t have the time for all of that. The food I serve on game day is quick and easy, affordable, and also very tasty. Ball Park® Franks and Tyson® Boneless Buffalo Chicken Wyngz are both available in bulk packages at Sam’s Club, so I can save time and money on my game day food! Both products are super easy to cook, and so versatile that I can do quite a lot of different things with them.

When I think about what kind of food to serve during a football game, barbecue and buffalo flavors both come to mind. During a recent game day, I made Buffalo Chicken Naan Pizzas and Sweet & Spicy Barbecue Hot Dogs. They were both a big hit!

The recipes I’m sharing in this post are for smaller portions, so they can be used to feed your family any night of the week, but they can be easily doubled or tripled if you have a large amount of people at your game day gatherings.

I absolutely love these Tyson Boneless Buffalo Chicken Wyngz. They are a cinch to cook – just put them on a foil-lined pan sprayed with cooking spray and toss them in the oven for 15-20 minutes. Super easy! They also have an amazing buffalo flavor. If you love spice, you’ll love these tasty Boneless Buffalo Chicken Wyngz. I love putting them in salads, on pizza, in sliders, and they are fantastic just dipped in ranch or blue cheese dressing. There are really so many wonderful things you can do with these!

I had so much fun making these Buffalo Chicken Naan Pizzas. They are spicy, cheesy, and perfect for game day because you can just dig in and eat them with your hands – no utensils required!

INGREDIENTS:

  • 5 cups Tyson Boneless Buffalo Chicken Wyngz
  • 2 loaves of Naan bread
  • ¼ cup ranch dressing
  • ¼ cup buffalo sauce
  • 2 tablespoons diced green onion + more for garnish
  • ¾ cup crumbled blue cheese, divided
  • ½ cup shredded Colby/Monterey Jack cheese blend
  • ½ cup shredded Mozzarella cheese

DIRECTIONS:

  1. Preheat oven to 400 degrees F. Spray a foil-lined baking sheet with cooking spray. Bake 1.5 cups of Tyson Boneless Buffalo Chicken Wyngz for 15 minutes.
  2. While the chicken is baking, prepare the sauce.
  3. To make the sauce, combine ranch dressing, buffalo sauce, green onion, and ¼ cup blue cheese in a small bowl.
  4. Divide the sauce and spread equally over both loaves of Naan bread.
  5. Top each loaf of Naan bread with equal amounts of Colby/Monterey Jack cheese blend.
  6. After the chicken is done baking, chop it into bite-sized pieces, divide, and top each loaf of Naan bread with equal amounts of chicken.
  7. Divide remaining blue cheese and Mozzarella cheese, and top each Naan bread with equal amounts.
  8. Place Naan bread pizzas directly on the center rack of a preheated 400 degree oven (just leave the oven on after the chicken has finished baking and it will be ready to go!), and bake for 8-10 minutes.

Your friends and family will love these pizzas, and I’m sure they will also love these Sweet & Spicy Barbecue Hot Dogs!

Ball Park® Beef Franks are so juicy and delicious, and I love how they plump up as you cook them. They are ready to eat in just a few minutes and you can put pretty much any toppings you want on them. I remember eating these all the time as a kid, and they bring back so many great memories of camping and gathering with friends and family on game day.

The pineapple, jalapeno & red onion relish I made was a perfect combination of sweet and spicy and really paired so well with the hot dogs.

INGREDIENTS:

  • 4 Ball Park Franks
  • 4 hot dog buns
  • 2 pineapple rings, diced
  • ½ of a jalapeno, diced (take the seeds out if you don’t like a lot of spice)
  • ¼ cup red onion, diced
  • Pinch of salt
  • 2 tablespoons barbecue sauce
  • 2 slices pepper jack cheese

DIRECTIONS:

  1. Grill hot dogs over medium heat for 6-10 minutes, or boil for 4-5 minutes.
  2. While the hot dogs are cooking, prepare the relish. You could also make this shortly before your guests arrive to save more time.
  3. To make the relish, combine pineapple, jalapeno, red onion and salt in a small bowl.
  4. Line a deep casserole dish with hot dog buns.
  5. When hot dogs are finished cooking, place them in hot dog buns.
  6. Top each hot dog with relish, ½ tablespoon barbecue sauce, and pepper jack cheese.
  7. If you really want to get into the game day spirit, arrange your cheese to look like the threads on a football. If you don’t want to spend the time doing that, just throw it on top!
  8. Place hot dogs in preheated 350 degree F. oven for 5-7 minutes, until cheese has slightly melted.

These hot dogs are the perfect balance of sweet and spicy and are sure to be a big hit!

I absolutely love Mexican food. I really think I could eat tacos and quesadillas every day of the week and be completely satisfied. There’s just something so amazing about that flavorful combination of salsa and melted cheeses, don’t you think?

This morning, I was craving Mexican food before I even had my morning coffee, so I decided to use the Naan bread I had on hand to make a Mexican breakfast pizza. If you’ve never had a breakfast pizza before, you totally should. It’s hearty and satisfying, and a great way to start off the day. I love that you can put anything you want on it too!

For this Mexican pizza, I used scrambled eggs, a medium salsa, shredded Monterey Jack/Colby cheese and topped it off with one of my favorite garnishes – green onions. It was so delicious!

The thing I love most about this pizza is how quick and easy it is to make. There’s no fussing around with making a pizza crust because you just throw your toppings on the Naan bread. After you put whatever your little heart desires on top, pop it in the oven for 8-10 minutes, and it’s done! That’s faster than ordering a pizza for delivery!

I hope you’ll give this recipe a try, and don’t be afraid to experiment and add your own favorite toppings. This pizza is big enough to serve 2 people a light breakfast, or if you’re really hungry, just eat the whole thing by yourself!

INGREDIENTS:

  • 1 loaf of Naan bread
  • 2 scrambled eggs
  • 1/2 cup shredded Monterey Jack/Colby cheese, divided
  • 2 tablespoons salsa
  • Diced green onions for garnish

DIRECTIONS:

  1. Preheat oven to 400 degrees.
  2. Top Naan bread with 1/4 cup shredded cheese.
  3. Spoon the salsa evenly around the pizza.
  4. Add scrambled eggs.
  5. Top with remaining 1/4 cup shredded cheese.
  6. Bake on a baking sheet for 8-10 minutes.
  7. Remove from oven and top with green onions. I used a full tablespoon, but I really like green onions. You may want to use less depending on your preference.

Yesterday, on a whim, I made White Chocolate and Peanut Butter Wheat Thin Cookies, and they were fantastic! My husband tried them when he came home from work, and he said “You have to take this bag away from me, or I’m going to eat them all.” They are seriously addictive!

White Chocolate and Peanut Butter Wheat Thin Cookies

I’ve noticed over the last few years, that people seem to go absolutely crazy over chocolate dipped goodies at Christmas parties. These kinds of treats are usually gobbled up quicker than cookies, pies and that sort of thing. It’s not really a big surprise to me, though, because who doesn’t love some chocolate?!

I’ve had Christmas baking on my mind lately, so yesterday I thought I would experiment a little bit with the whole chocolate dipping thing. I had a big box of Wheat Thins on hand, along with some peanut butter, white chocolate chips and mini chocolate chips. I spread a little bit of peanut butter between two Wheat Thins, sandwiched them together, then dunked the whole thing in melted white chocolate and sprinkled some mini chocolate chips on top.

These “cookies” set up super fast, and when they were ready to eat, I had to exercise some serious will power. This treat is salty & sweet, and so delicious! My husband said these taste kind of like a Butterfinger candy bar that’s been dipped in white chocolate. These White Chocolate & Peanut Butter Wheat Thin Cookies are so easy to make, and only require 4 ingredients! If you’re looking for a fun and tasty treat to bring to a holiday gathering, but don’t feel like spending hours baking, this is for you!

White Chocolate and Peanut Butter Wheat Thin Cookies

INGREDIENTS:

  • 48 Wheat Thins
  • 2 Tablespoons Peanut Butter
  • 1.5 Cups White Chocolate Chips
  • 1/4 Cup Mini Chocolate Chips

DIRECTIONS:

  1. Spread a small amount of peanut butter between two Wheat Thins crackers; repeat until all crackers have been used.
  2. Melt white chocolate chips in microwave at 50% power for one minute; stir. Return to microwave at 30 second intervals until chocolate is completely melted and smooth.
  3. Dip cracker sandwiches in white chocolate to coat. I use a fork to do this step, which makes it easy to shake excess white chocolate off into the bowl. Set cracker sandwiches on wax paper and immediately top each one with mini chocolate chips as you put it on the wax paper. The white chocolate sets up really fast, so the mini chocolate chips will not stick if you don’t place them on immediately, while the white chocolate is still warm.
  4. Place in refrigerator or freezer for 10-15 minutes to set completely. Store in an airtight container.

It seems most people either love everything pumpkin spice or hate it with a passion. There’s always a war about it in my Facebook feed around this time every year, and people get very opinionated. I don’t really partake in the ongoing war, but I honestly could enjoy it all year round. I have even been known to make pumpkin pancakes for breakfast smack in the middle of summer, that’s just how much I love it.

It’s a cool fall day here in Maine today, so this morning I made a Pumpkin Spice Banana Oatmeal for breakfast. Oatmeal is one of my favorite breakfast foods because t’s quick, easy, hearty and so versatile. You can pretty much add anything you want to it, and make it sweet, or even savory. Yes, savory oatmeal is definitely a thing, and it’s amazing. I’ll share some of my savory oatmeal recipes with you another time.

Today, I added some banana to my oatmeal. I love adding bananas to oatmeal because it makes it really thick and creamy, and it gives it a really delicious flavor. I also thought it would pair quite well with the pumpkin flavor.

Pumpkin Spice Banana Oatmeal

This oatmeal is really easy to whip up and cooks in the microwave in just a few minutes. It’s a perfect breakfast for a cool fall morning, and leaves you feeling satisfied until lunch time rolls around.

Pumpkin Spice Banana Oatmeal

INGREDIENTS:

  • 1/3 cup quick cook steel cut oats
  • 3/4 cup water
  • 1 tsp. brown sugar
  • 1/2 cup milk
  • 1/2 banana (sliced)
  • 1/4 – 1/2 tsp. pumpkin spice

DIRECTIONS:

  1. Mix oats, water and brown sugar in a deep microwave-safe bowl. Microwave at 50% power for 3 minutes.
  2. Add milk, banana slices and pumpkin spice and stir to combine. Return to microwave at 50% power for 1 minute.
