As a busy Mom of two toddlers, I often have trouble finding time to make breakfast for myself and my husband in the mornings. We have both been following a low carb diet for over 6 months now, so we can’t just grab something like a donut to eat when we’re busy or on-the-go.
We usually eat bacon or sausage, eggs, and cheese for breakfast, but it’s often hard to find the time to cook it. Bacon especially takes a while to cook, and it’s something you really have to pay close attention to. My husband often rushes off to work without eating breakfast, simply because we just didn’t have the time to cook anything.
I recently heard about Jimmy Dean Simple Scrambles, and I thought it would be a perfect solution for the mornings when I am too busy to cook breakfast for us.
Jimmy Dean Simple Scrambles come in three varieties – bacon, meat lovers and sausage. You can find them at Walmart, in the refrigerated meats section next to the pre-cooked bacon.
I love how easy these are to cook up. You simply peel the lid off, pour the (REAL!!) eggs in the cup, microwave for 45 seconds, stir, add the meat and cheese, and microwave for an additional 20-30 seconds. That’s it!
I have to say, these Simple Scrambles taste really good! I was afraid they might taste a bit bland or rubbery, but they actually taste like something I would cook myself at home. I love that they are high protein and low carb, and are a fantastic option when I need a quick and easy breakfast. My husband will be taking these to work with him now too!
The portion size of this product is just perfect. It’s not too much, but it’s enough to leave you feeling full and satisfied. They certainly did not skimp on the meat and cheese either!
We are planning on taking a family vacation soon, and really want to keep costs as low as we can. We are planning on bringing our own food and eating in our hotel room for most of the vacation. Eating out with toddlers is not really very fun, it’s expensive to eat out all the time, and it can also be challenging to follow a low carb diet when eating out at a restaurant. I will definitely be packing some Jimmy Dean Simple Scrambles to take with us on our trip. Our hotel room has a microwave and a refrigerator, so we will be all set!

Cauliflower seems to be all the rage lately, and I have totally jumped on the bandwagon! I use cauliflower in place of rice and potatoes all the time. I even recently made a cauliflower ‘hummus’. It was delicious, and surprisingly, very similar to regular hummus!
With summer just around the corner, I am now thinking about how to use cauliflower in my favorite summer salads. It’s such a versatile vegetable that can be used so many ways. I can’t wait to experiment with it some more and see what other fun recipes I can come up with.
I have always loved potato salad, but my husband and I have been eating low carb for over 6 months now, and our diet no longer includes potatoes. Not to worry, though, because cauliflower makes a great faux potato salad!
Cauliflower on its own can be a bit bland, so I added a little spice to this recipe by adding Colman’s Mustard. Mustard is always a staple in my home, and I usually have at least half a dozen different flavors on hand. It adds so much flavor to my dishes, and it also fits well into my low carb lifestyle.
Colman’s Mustard is spicy, but it’s a nose hot, not a throat hot. It doesn’t leave your lips feeling like they are on fire, but it has a nice amount of spice to it. It’s kind of like a mix between wasabi and cayenne pepper, and it’s delicious!
2 cups cauliflower florets, chopped into bite-sized pieces
2 tablespoons extra virgin olive oil
Salt, pepper and paprika to taste
2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon Colman’s Mustard
2 hard-boiled eggs, diced
2 tablespoons finely diced celery
2 tablespoons diced green onion
Preheat oven to 400 degrees F.
Toss cauliflower, salt, pepper, paprika, and extra virgin olive oil in a bowl until cauliflower is well coated.
Arrange cauliflower on a foil lined baking sheet and bake for approximately 22-24 minutes, until cauliflower is slightly browned and crispy. (I prefer baking my cauliflower instead of cooking it on the stove because it gets more moisture out of the cauliflower and keeps the salad from getting soggy.)
Remove cauliflower from oven and allow it to cool.
Transfer cauliflower to a medium-sized bowl and add hard-boiled eggs, celery and green onion.
In a small bowl, combine mayonnaise, sour cream, Colman’s Mustard, and a dash of salt and pepper.
Pour dressing over cauliflower mixture and toss until well combined.
Cover cauliflower salad and place in refrigerator for at least one hour to allow the flavors to combine.

Summer is almost here, and one thing I am really looking forward to is all the yummy food I will be eating! My family gets together quite often during the warm summer months, and we always have a great time catching up with each other, playing with our kids in the back yard, and eating delicious foods, of course!
One of my favorite summer dishes is deviled eggs. My husband and I have been on a low carb diet for over 6 months now, so eggs have become a staple in our home. I love deviled eggs because they are so versatile and delicious. You can really flavor them up any way you want, and they are a perfect ‘grab and go’ food. No plate required! As a Mom of two busy toddlers, finger foods like this are definitely my friend.
One ingredient I always add to my deviled eggs, no matter which flavor direction I go in with them, is mustard. I love mustard so much that I always have about half a dozen different flavors of it in my refrigerator. You can really add so much flavor to your favorite dishes by adding a bit of mustard. It just gives it so much more depth.
I was recently given the opportunity to try out Colman’s Dry Mustard. I have never tried this product before, but I was very intrigued by it, as I love mustard so much. I also love all things spicy, and when I heard this mustard had a great kick to it, I knew I had to try it!
I added the Colman’s Dry Mustard to my deviled eggs, and it sure did give them a nice ‘kick’! The heat from this mustard is not throat hot, but nose hot. It’s sort of like a cross between wasabi and cayenne, and it’s delicious!
Colman’s Dry Mustard can be used in lots of recipes to really bring out the flavor and heat. Add a pinch to pasta, sprinkle on your pizza or serve on sushi! I can’t wait to add this mustard to some of my other favorite dishes, like summer salads and dips!
2 Tablespoons Colman’s Dry Mustard
12 hard-boiled eggs
5 teaspoons Kosher salt
6 tablespoons mayonnaise
5 tablespoon dried chives
3 tablespoons Sour Cream
Hard boil, cool and peel eggs.
Cut eggs in half lengthwise and carefully remove yolks.
Place yolks in a bowl and mash with a fork.
Add remaining ingredients and mix until well combined. Mixture should be smooth and creamy.
Spoon yolk mixture back into the egg whites.
Garnish with additional dried chives, if desired.
Store in an airtight container in the refrigerator until ready to serve.

Cheese boards are a popular appetizer choice during the busy holiday season, and it’s easy to see why. I mean, who doesn’t love cheese?! Cheese boards are so great because they are really easy to put together. You just get a bunch of your favorite cheeses and finger foods, arrange them on a board, and call it a day. It’s a nice way to offer your guests a lot of variety, without a whole lot of effort on your part, and you don’t have to worry about dirtying up a whole bunch of dishes either.
When making cheese boards, people usually tend to load them up with a whole bunch of carbs – slices of crusty bread, crackers, bread sticks, etc., and lots of sugary fruits like grapes and figs. While those foods are delicious, they can be an unwelcome temptation to people who are trying to watch their weight, or for people with certain medical issues. This holiday season, I decided to offer my guests a low carb cheese board instead.
My low carb cheese board starts off with some delicious cheese, of course! I love Stella cheeses. They are so flavorful, and really quite reasonably priced. That makes it easy to pick up a few different varieties to please all of my guests. I also like the fact that I don’t have to go to a fancy cheese store to find them, as they are available at Walmart and my local grocery store. They have quite a large selection of cheeses (16!!) to choose from, too, which is great. I chose four different varieties of Stella cheese for my cheese board – Parmesan, Romano, Asiago and Italian.
The Parmesan and Romano are both hard cheeses, so I decided to use them to make some cheese crisps in place of crackers. All you have to do to make these is shred the cheese with a grater, lay it out on a paper plate, top with any seasonings you want and pop it in the microwave for one minute. Let them cool for another minute, remove from the plate, and they will crisp right up! You can also make these in the oven by laying the cheese out on a sheet pan covered with parchment paper and cooking for 5-6 minutes at 400 degrees.
I made plain Parmesan, rosemary Parmesan, black pepper Romano and crushed red pepper Romano cheese crisps. They came out so good, and I loved the flavor of all of them! They have a really nice crunch to them, and your guests will never miss the crackers!
I see a lot of people just stick a big hunk of cheese and a knife down on their cheese board, and that always bothers me. My guests did not come visit me to have to work for their food! It’s fine to do that with soft cheeses that are more suited for spreading, but I like to cut my firmer cheeses up into bite-sized pieces so guests can just pop them onto their plate or in their mouth, and not spend time cutting up their own cheese. It just makes things flow better too, when people are lined up to get their food.
I added four different meats to my cheese board – ham, hot capicola, prosciutto and pepperoni. Just have your deli slice these thin, then roll them up tightly and place them on your board.
Instead of loading up my cheese board with a bunch of sugary fruits, I loaded it up with a selection of low carb vegetables. These pepperoncinis, Mediterranean mushrooms, olives, pickles and banana peppers have a lot of flavor and perfectly compliment the meats.
Your guests will have fun experimenting and trying out new flavor combinations. I love pepperoni and a banana pepper on a black pepper cheese crisp!
If you want to add some fruit to your low carb cheese board, berries are a good option. I added a few strawberries in, as they are not terribly high in sugar and they bring a little pop of color and freshness to the cheese board.
Finally, I added some almonds to my cheese board. Guests always love to snack on nuts, but some nuts like cashews and chestnuts are high in carbs. Almonds, Brazil nuts, Macadamia Nuts, peanuts and pecans are all great low carb options to add to your cheese board.

It’s football season again, and I’m so excited to share a couple of quick and easy game day recipes with you! My friends and family love football, and we are from New England, so I bet you can easily guess who our favorite team is.
When I have company over to watch the game, I don’t want to spend the whole time in the kitchen slaving over the stove. I have two toddlers, so I am already busy enough tending to them, without adding extra work. I want to be able to relax, watch the game, and spend some quality time with my friends and family.
I keep our game day gatherings pretty low key. I don’t go all out with decorations and fancy food with crazy ingredients and lots of steps. I’m on a pretty strict budget and I just don’t have the time for all of that. The food I serve on game day is quick and easy, affordable, and also very tasty. Both products are super easy to cook, and so versatile that I can do quite a lot of different things with them.
When I think about what kind of food to serve during a football game, barbecue and buffalo flavors both come to mind. During a recent game day, I made Buffalo Chicken Naan Pizzas and Sweet & Spicy Barbecue Hot Dogs. They were both a big hit!
The recipes I’m sharing in this post are for smaller portions, so they can be used to feed your family any night of the week, but they can be easily doubled or tripled if you have a large amount of people at your game day gatherings.
I absolutely love these Tyson Boneless Buffalo Chicken Wyngz. They are a cinch to cook – just put them on a foil-lined pan sprayed with cooking spray and toss them in the oven for 15-20 minutes. Super easy! They also have an amazing buffalo flavor. If you love spice, you’ll love these tasty Boneless Buffalo Chicken Wyngz. I love putting them in salads, on pizza, in sliders, and they are fantastic just dipped in ranch or blue cheese dressing. There are really so many wonderful things you can do with these!
I had so much fun making these Buffalo Chicken Naan Pizzas. They are spicy, cheesy, and perfect for game day because you can just dig in and eat them with your hands – no utensils required!
5 cups Tyson Boneless Buffalo Chicken Wyngz
2 loaves of Naan bread
¼ cup ranch dressing
¼ cup buffalo sauce
2 tablespoons diced green onion + more for garnish
¾ cup crumbled blue cheese, divided
½ cup shredded Colby/Monterey Jack cheese blend
½ cup shredded Mozzarella cheese
Preheat oven to 400 degrees F. Spray a foil-lined baking sheet with cooking spray. Bake 1.5 cups of Tyson Boneless Buffalo Chicken Wyngz for 15 minutes.
While the chicken is baking, prepare the sauce.
To make the sauce, combine ranch dressing, buffalo sauce, green onion, and ¼ cup blue cheese in a small bowl.
Divide the sauce and spread equally over both loaves of Naan bread.
Top each loaf of Naan bread with equal amounts of Colby/Monterey Jack cheese blend.
After the chicken is done baking, chop it into bite-sized pieces, divide, and top each loaf of Naan bread with equal amounts of chicken.
Divide remaining blue cheese and Mozzarella cheese, and top each Naan bread with equal amounts.
Place Naan bread pizzas directly on the center rack of a preheated 400 degree oven (just leave the oven on after the chicken has finished baking and it will be ready to go!), and bake for 8-10 minutes.
Your friends and family will love these pizzas, and I’m sure they will also love these Sweet & Spicy Barbecue Hot Dogs!
Ball Park® Beef Franks are so juicy and delicious, and I love how they plump up as you cook them. They are ready to eat in just a few minutes and you can put pretty much any toppings you want on them. I remember eating these all the time as a kid, and they bring back so many great memories of camping and gathering with friends and family on game day.
The pineapple, jalapeno & red onion relish I made was a perfect combination of sweet and spicy and really paired so well with the hot dogs.
The barbecue sauce and melted pepper jack cheese took these franks to another level!
4 Ball Park Franks
4 hot dog buns
2 pineapple rings, diced
½ of a jalapeno, diced (take the seeds out if you don’t like a lot of spice)
¼ cup red onion, diced
Pinch of salt
2 tablespoons barbecue sauce
2 slices pepper jack cheese
Grill hot dogs over medium heat for 6-10 minutes, or boil for 4-5 minutes.
While the hot dogs are cooking, prepare the relish. You could also make this shortly before your guests arrive to save more time.
To make the relish, combine pineapple, jalapeno, red onion and salt in a small bowl.
Line a deep casserole dish with hot dog buns.
When hot dogs are finished cooking, place them in hot dog buns.
Top each hot dog with relish, ½ tablespoon barbecue sauce, and pepper jack cheese.
If you really want to get into the game day spirit, arrange your cheese to look like the threads on a football. If you don’t want to spend the time doing that, just throw it on top!
Place hot dogs in preheated 350 degree F. oven for 5-7 minutes, until cheese has slightly melted.
These hot dogs are the perfect balance of sweet and spicy and are sure to be a big hit!

I absolutely love Mexican food. I really think I could eat tacos and quesadillas every day of the week and be completely satisfied. There’s just something so amazing about that flavorful combination of salsa and melted cheeses, don’t you think?
This morning, I was craving Mexican food before I even had my morning coffee, so I decided to use the Naan bread I had on hand to make a Mexican breakfast pizza. If you’ve never had a breakfast pizza before, you totally should. It’s hearty and satisfying, and a great way to start off the day. I love that you can put anything you want on it too!
For this Mexican pizza, I used scrambled eggs, a medium salsa, shredded Monterey Jack/Colby cheese and topped it off with one of my favorite garnishes – green onions. It was so delicious!
The thing I love most about this pizza is how quick and easy it is to make. There’s no fussing around with making a pizza crust because you just throw your toppings on the Naan bread. After you put whatever your little heart desires on top, pop it in the oven for 8-10 minutes, and it’s done! That’s faster than ordering a pizza for delivery!
I hope you’ll give this recipe a try, and don’t be afraid to experiment and add your own favorite toppings. This pizza is big enough to serve 2 people a light breakfast, or if you’re really hungry, just eat the whole thing by yourself!
1 loaf of Naan bread
2 scrambled eggs
1/2 cup shredded Monterey Jack/Colby cheese, divided
2 tablespoons salsa
Diced green onions for garnish
Preheat oven to 400 degrees.
Top Naan bread with 1/4 cup shredded cheese.
Spoon the salsa evenly around the pizza.
Add scrambled eggs.
Top with remaining 1/4 cup shredded cheese.
Bake on a baking sheet for 8-10 minutes.
Remove from oven and top with green onions. I used a full tablespoon, but I really like green onions. You may want to use less depending on your preference.

I put together a list of 50 of my favorite Thanksgiving desserts, including dumplings, pies, brownies, bread pudding, cookies, fudge, cake and so much more!
