These Jalapeno Zucchini Cheddar Scones are a delicious savory scone you can enjoy any time of day!

It may be fall, but the weather here in Maine has been screaming “Summer’s not over yet!” this week. It actually got up to 90 degrees here yesterday, and my husband and I were completely regretting having already taken the air conditioner out of our bedroom when the temperature was still 81 degrees at 11pm last night.

Even with the hot temperatures we’ve been having, I cannot get rid of this baking bug that I have. My mind is saying “It’s fall! Bake all the things!!” So, I’ve been trying to get any baking I want to do done during the early morning hours before it gets too hot in the house. This post contains affiliate links. Yesterday, I baked up the most delicious Jalapeno Zucchini Cheddar Scones. I have been craving a savory scone for what seems like forever, and I finally decided to make it happen.

Jalapeno Zucchini Cheddar Scones

We had a whole bunch of fresh jalapenos from our garden, and I took out some of the shredded garden zucchini that I had put in the freezer earlier this summer. I just love using up all of the delicious vegetables from our garden!

Jalapeno Zucchini Cheddar Scones

I know most people say scones taste best when fresh out of the oven, but I thought these Jalapeno Zucchini Cheddar Scones tasted even better as the day went on. They were so good, I ate three of them by myself!

Jalapeno Zucchini Cheddar Scones

3/4 cup packed shredded zucchini (drained very well)
1 large jalapeno (seeded and diced)
1 stick very cold butter
1 large egg
1/2 cup full fat sour cream
1 cup shredded sharp cheddar cheese, divided
2.5 cups all purpose flour
1.5 tablespoons baking powder
1/2 teaspoon coarse salt
1 tsp. garlic powder
1 tsp. onion powder
1/4 tsp. black pepper
1/4 tsp. cayenne pepper

  1. Preheat oven to 400 degrees F.
  2. Line a baking sheet with parchment paper and set aside.
  3. In a large bowl, combine flour, baking powder, salt, garlic powder, onion powder, black pepper and cayenne pepper.
  4. Use a grater to quickly grate the cold stick of butter into the flour mixture. For best results, place stick of butter in freezer for 10 minutes first. Cold butter makes the scones flaky!
  5. Quickly work the butter into the flour mixture with a fork until it resembles coarse meal.
  6. Beat the egg in a small bowl.
  7. Add sour cream to beaten egg and whisk to combine. Add egg and sour cream mixture to flour mixture and stir to combine.
  8. In a small bowl, combine zucchini, diced jalapeno, 3/4 cup of the sharp cheddar and 2 tablespoons of flour. Toss to coat. This will prevent all of the ingredients from sinking to the bottom of the dough.
  9. Fold zucchini mixture into flour mixture, until distributed evenly.
  10. Place the dough mixture onto a clean floured work surface and shape the dough into an 8 inch circle. You will have to knead it quite a bit to get it to come together.
  11. Cut the dough into 8 wedges and carefully transfer them to the prepared baking sheet.
  12. Sprinkle the top of each scone with a little of the remaining cheese.
  13. Bake for 22-24 minutes.

Old Fashioned Soft Pumpkin Cookies

You’ll love these old fashioned soft pumpkin cookies, just like Grandma made!

Old Fashioned Soft Pumpkin Cookies

It’s officially the first day of fall, and I am so excited! I have already been apple picking once this year, but my family is headed back to the orchard again tomorrow.

Our local orchard has so many activities going on all the time, that we visit a few times before the season is over. In addition to their bountiful supply of apples and pumpkins, they have squash and flowers available for picking. They also have an ice cream stand, fresh baked apple cider and pumpkin spice donuts, apple cider, goats that my kids just love to feed, chickens, rabbits, a bird cage, a sand box, hay rides, a corn maze and so much more! Tomorrow, they are having a performance from Timber Tina of the Great Maine Lumberjack Show!

The last time we went to the orchard, we picked a whole bunch of apples, and my daughter just had to bring home a million different pumpkins. This kid is going to have some serious fall decorating skills when she is older. She selected lots of different varieties, but I made sure we grabbed a couple that would be perfect for baking with.

The pumpkins we bought were so fresh that I could not even cut into them when we got home. They were just too darn hard! I had to let them sit for about 2 weeks before they were ready to be cut into. I really wanted to bake a pumpkin pie, but the kids insisted on baking cookies instead! I came up with these old fashioned soft pumpkin cookies, and they just loved them!

Old Fashioned Soft Pumpkin Cookies

My inspiration for these cookies was my grandmother. She passed away last year, and I often think of her when I am baking. She was the most amazing baker, and what I loved most about her baked goods was how simple, yet flavorful they were. She was all about baking soft, very plain looking cookies that tasted wonderful. I love cookies that are not overly fancy or sweet, and these old fashioned soft pumpkin cookies really fit that bill. They have just a subtle pumpkin flavor that’s perfect for fall! This post contains affiliate links. I may earn a commission if you make a purchase after clicking a link in this post.

Farberware Insulated Nonstick Bakeware 15-1/2-Inch x 20-Inch Jumbo Cookie SheetFarberware Insulated Nonstick Bakeware 15-1/2-Inch x 20-Inch Jumbo Cookie SheetThis Farberware Insulated Nonstick Bakeware Jumbo Cookie Sheet is THE BEST cookie sheet I have ever owned. I have had mine for over 10 years! I use it every single time I bake cookies, which is quite often, and it’s still in awesome condition.

I love this cookie sheet for several different reasons. For starters, this cookie sheet is HUGE. When they say “Jumbo”, they are not exaggerating. If you bake cookies often, this will save you lots of time because you can bake a lot of cookies all at once on this cookie sheet.

This cookie sheet is non-stick, which is just awesome. The cookies slide right off after they are done baking.

My cookies always bake up very evenly on this cookie sheet, and I love that it only has one lip on it. It makes it really easy to grab it out of the oven without smushing any of the cookies, and the cookies just slide right off the side of the cookie sheet.

This cookie sheet is super easy to clean! The cookies slide right off this cookie sheet, so there is pretty much zero clean up. I just wipe it down quickly with a wet cloth, and it’s good to go!

I’ve been baking cookies for many years, and these 6 kitchen tools are my absolute favorite for baking cookies. They make it so much faster and easier to bake up a whole bunch of cookies, and I would highly recommend them to anyone who loves to bake cookies.

I hope you enjoy these old fashioned soft pumpkin cookies as much as my family does!

Old fashioned Soft Pumpkin Cookies

1 cup granulated sugar
1/2 cup packed brown sugar

1 large egg
2.5 cups all purpose flour
3 tsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. pumpkin pie spice
1/2 tsp. allspice
1/2 tsp. coarse salt

  1. Preheat oven to 350 degrees F.
  2. In a stand mixer, cream 1 stick of softened butter, 1 cup of granulated sugar, and 1/2 cup of packed brown sugar in a large mixer bowl until well blended.
  3. Add the pumpkin and egg, and beat on high speed for approximately 3 minutes until smooth and fluffy.
  4. In a separate bowl, combine 2.5 cups flour, 3 tsp. baking powder, 2 tsp. cinnamon, 1/2 tsp. allspice, 1/2 tsp. pumpkin pie spice, and 1/2 tsp. coarse salt.
  5. With the mixer on low speed, slowly add flour mixture to pumpkin mixture until combined.
  6. Use a cookie scoop to drop cookies onto a cookie sheet lined with parchment paper.
  7. Bake cookies at 350 degrees F. for 15-18 min., until golden brown around the edges.
  8. Allow cookies to cool on the baking sheet for a minute, then transfer to a wire cooling rack.
  9. Store cookies in an airtight container. This recipe makes approximately 28 cookies.

Check out these super fun and easy Halloween treats kids will love!

Halloween is just around the corner, and my kids are already so excited to dress up in their costumes. Kayleigh wants to be Elsa this year, and Logan wants to be Spiderman.

Last year we found this one really long street in our city that was decked out like crazy. Almost every house was decorated with the finest Halloween decorations and there was plenty of candy to be found. My kids are still really little, so it’s nice to be able to just walk up and down one street, instead of having to travel all over the place with them to find Halloween candy.

We love to do all sorts of fun things leading up to the actual Halloween holiday. We watch family friendly Halloween movies, go to some trunk or treat events and I also like to make easy Halloween treats kids will go crazy over. This post contains affiliate links. Thanks to Hannaford for sponsoring this Turkey, Cheddar & Apple Crescent Roll recipe post. All opinions are 100% my own.

Back to school season is in full swing, and with the holidays just around the corner, now is a perfect time for busy parents to find quick and easy dinner ideas that are affordable too.

Hannaford’s everyday low prices and quality brands can help save both time and money. With their wide selection of Hannaford brand products, it’s easy to create a fun and delicious meal that the whole family will love, even if you are on a tight budget.

I know I’m going to be very busy over the next few months, so I recently stocked up on a large assortment of Hannaford brand products. To make things even easier, I used their to-go service (available at select Hannaford locations) and was able to place my order online and pick my groceries up without even leaving my car! As a Mom of two kids, this is such a huge time-saver for me.

One of my family’s favorite meals starts with Hannaford brand crescent rolls, so I purchased quite a few packages of them. I love how quick and easy they are to bake (ready in just 11-13 minutes!) and how versatile they are. You can stuff these crescent rolls with pretty much anything your heart desires before baking them, to create something absolutely wonderful!

Hannaford Brand Crescent Rolls

For tonight’s dinner, I filled the crescent rolls with thin sliced roasted turkey breast, shredded cheddar cheese and thin apple slices. After they were done baking, I paired our tasty crescent rolls with a delicious honey mustard dipping sauce. The flavors all worked together so wonderfully, and my family really enjoyed them.
