It seems like pressure cooking is all the rage these days, and after trying the Fairwind FWPCL 6 Liter Pressure Cooker, I can see why! It really makes cooking up your favorite meals so quick and easy.

I recently made a very simple minestrone in my new pressure cooker, and it came out delicious. I was very impressed with how easy it was to just put everything in the pot and let it cook while I did other things around the house. I really liked not having to watch the stove constantly while my soup cooked. In about 45 minutes, I had a hot and delicious bowl of soup ready to eat!

I love minestrone soup, because there are no set rules to making it. You can pretty much use any kind of broth base that you want – chicken, beef or vegetable, add some tomatoes and whatever other vegetables you want. Toss in some kidney beans and short pasta if desired, and you’ve got yourself a hearty bowl of soup in no time!

I’ve been trying to watch my weight, so I decided to make this soup without any pasta in it. This was my lunch for today, and if I was making it for dinner, I probably would have added some brown rice pasta to make it a little more filling. I thought this was just right for a light afternoon lunch though.

Using frozen vegetables, beef stock, diced tomatoes and dark red kidney beans, this soup was very inexpensive and easy to make. The vegetables were already pre-chopped, so there was really very little work on my part to bring this soup together. The full directions are below.

Minestrone Soup


  • 14 oz. frozen grilling blend vegetable mix (zucchini, yellow squash, red onion, red pepper)
  • 14.5 can of oz. diced tomatoes (basil, garlic & oregano flavored)
  • 1 cup dark red kidney beans (drained and rinsed)
  • 3 cups low sodium beef broth
  • 1 bay leaf


Add all ingredients to Fairwind Pressure Cooker, stir to combine, close the lid, making sure that the pressure release button is pointed down. Press the soup setting button on the pressure cooker. When the soup is done, the unit will beep. Season with salt and pepper, and top with grated parmesan cheese, if desired.

At the beginning of every year, I buy a paper calendar, with intentions of finally becoming organized for once in my life, and every year the same thing happens – I use it for a couple of weeks, and then it ends up getting buried somewhere, like the back of my closet, or in a drawer, and I completely forget about it. Either that, or one of my kids gets a hold of it and tears it to shreds. All of my plans for organization go right out the window, and I’m back to living life completely scatterbrained, trying to remember important dates in my head.

As a Mom of two kids under 3, I already have enough to worry about, without stressing about remembering important dates too. I need a calendar system that actually works for me and that will help me to keep my sanity.

I have finally realized that paper calendars are just not for me, and I need something digital to help keep me organized.  As a blogger, I am online most of the day (and night too!) so a digital calendar will work very well for me. It will always be right at my fingertips, and it won’t get lost after two weeks of use!

It’s hard to believe the big game is just around the corner! Are you ready yet? Being from New England, I must admit I’m a little disappointed that my team won’t make it to the big game this year, but my family and I will still be watching from the comfort of our home.

I’ve been busy filling out my shopping list, which includes lots of food, drinks and a few other things to get our home ready for guests.  A few days before the big game arrives, I’ll head out to Walmart to do all of my shopping. It’s just a few minutes from my house, so it’s super convenient. I love that I can find everything I need in one place. I’ll likely have the kids with me when I go, so I don’t want to have to run around to several stores trying to find what I need. I also love shopping at Walmart because I get to use the Walmart Savings Catcher app, which has saved me a lot of money!

One of my favorite things about the big game is all of the yummy food we get to eat! I always make Buffalo Chicken Dip. It’s my husband’s all time favorite, and it’s always a huge hit with guests. While it is delicious, it can also be a bit messy to eat, so we keep Bounty Select-A-Size paper towels on hand to wipe up any messes.

I also like to serve up a big bowl of popcorn, because it’s just so easy, and who doesn’t love to stuff their face full of popcorn while watching tv? The thing about popcorn, though, is once you make it, it makes your house smell like popcorn for quite a long time after. Thank goodness for Febreze Air Effects, which makes my house smell nice and fresh again after just a few sprays.

I’ve been on an overnight oatmeal kick lately, experimenting with different flavor combinations, and I thought it would be nice to try making Tropical Overnight Oats using the Sunsweet products I received.

I really love overnight oats because they are super easy to whip up at night, and in the morning you have a healthy, nutritious and filling breakfast ready to go when you are. Overnight oats are so versatile, and you can really put any kind of flavor spin you want on them. Out of all of the flavors I have tried, I honestly think these tropical overnight oats are my favorite. They are so delicious!

Here’s what you need to make these tasty Tropical Overnight Oats:

  • 1/4 cup steel cut oats
  • 1/4 cup Greek vanilla yogurt
  • 1/3 cup coconut milk
  • 1 ripe banana (mashed until liquified)
  • 1/4 cup assorted diced Sunsweet Tropicals dried fruit (Philippine Pineapple, Philippine Mango, Philippine Green Mangos, Thai Coconut Chips)


Mix oats, yogurt, mashed banana and coconut milk in a container. Cover with a lid and give it a good shake to mix everything together. Place in refrigerator overnight. When you are ready to eat your oats, top with dried fruit mixture. *

*You could also mix the dried fruit into the oats before refrigerating if you would prefer. I tried the recipe both ways, and they were both great!

Dark Chocolate Chip Banana Bread Oatmeal

I made a drastic change in my diet at the beginning of the year, and I’m proud to say that I have been doing very well! I have been eating so much healthier than I used to, and I haven’t even had a cheat meal yet.

One of the things that I gave up at the beginning of the year was baking. I used to bake yummy, fattening treats all the time, and my biggest weakness was sweet breads and cookies. Oh, how I love both of those.

As I was browsing Pinterest the other night, I came across a recipe for Chocolate Chip Banana Bread Oatmeal Cookies, and I will admit, I had to wipe a little bit of drool off my chin. They looked so yummy and inviting, and I just wanted to take a big bite out of them.

When I woke up the next day, I still had those darn cookies on my mind. I decided I would try to make something similar, but healthier, that would calm that craving fast! To be honest, the recipe for the cookies isn’t really all that bad, since it calls for whole wheat flour and coconut oil, but if I bake a batch of cookies, I know I am going to be tempted to eat way too many of them.


I had steel cut oats, bananas, cinnamon and dark chocolate chips on hand, so I knew they would be my working ingredients.

Dark Chocolate Chip Banana Bread Oatmeal

I combined the steel cut oats, water, a sliced banana, and cinnamon in the microwave, and cooked it at 50% power for 5 minutes, until the oatmeal was nice and thick and the bananas were soft and creamy. When I stirred the mixture up, the bananas just sort of melted into the oatmeal, but also left a few chunks for some great flavor and texture.

I transferred the oatmeal to a bowl and added some dark chocolate chips which melted slightly after hitting that hot oatmeal, and voila! I now had a Dark Chocolate Chip Banana Bread Oatmeal, not in cookie form, but it was still delicious and I saved myself from eating a dozen cookies in one sitting. I call that a win!

If you’re looking for a healthy treat to calm a sweet craving you have, give this oatmeal a try. It’s quite delicious! The directions are listed below.

Dark Chocolate Chip Banana Bread Oatmeal


  • 1/3 cup steel cut oats (3 minute)
  • 3/4 cup water
  • 1/4 tsp. cinnamon
  • 1 medium ripe banana (sliced)
  • 1 tablespoon dark chocolate chips


  1. Combine oats, water, cinnamon, and banana slices in a deep microwave safe bowl.
  2. Microwave at 50% power for 5 minutes.
  3. Stir to combine.
  4. Top with dark chocolate chips.

And there you have yourself a quick and easy, and wonderfully delicious treat! Enjoy!

It’s hard to believe we are half-way through January already, and it’s even harder to believe that I haven’t broken my New Year’s resolution yet – getting healthy! This year, I have vowed to become a happier, healthier person, for myself, my husband and my children, and I’m getting them all involved too! I think working together as a family unit has really helped us to keep our momentum going.

5 Ways to be Happy & Healthy in the New Year

Eating Healthy Foods – My husband, John, and I had completely fallen into a rut last year. We were eating very unhealthy foods all the time, ordering take out a few times a week, eating giant portions of food, drinking soda, etc. While we felt a little sense of happiness during the few minutes in which we stuffed our faces with all of that bad food, we immediately felt disgusted with ourselves after. We were left feeling overweight and lethargic – not great for happiness.

We now eat as clean as we possibly can, cutting out sugar, bad carbs, starches, junk food. We no longer order out, and we make our own meals every morning, noon and night, using lots of lean protein and fresh fruits and vegetables. Our kids (Kayleigh, 2.5 years old and Logan, 10 months) have been enjoying the healthy foods with us, and I love that we are now setting a good example for them, and making sure that they are eating good foods to fuel their growing bodies. They are happy, even when their faces are covered with sweet potatoes!

Getting Active – John and I normally aren’t very active people. We love to be couch potatoes and spend the day playing video games, but we realized that was really doing us no good. So, we’ve been getting out of the house more with the kids. Before the snow came recently, we went to the playground a lot to swing and run around. Now, we like to bring the kids out to places like the pet store where they can be entertained, and we can get some exercise by walking around. I have also been dancing and doing yoga with the kids during the day while John is at work. They absolutely love running around and getting all of that energy out, and I have a lot of fun with them and getting some exercise myself.

Spending Quality Time Together – In addition to being more active with our kids, we have been spending more quality time together. At night, we like to turn off the television, put down our phones, computers and mobile devices, and wind down from our busy day together. We all sit on the couch and read stories together. Then, when it’s time for bed, John rocks Logan to sleep and I rock Kayleigh to sleep. We love the bonding time with the kids, and I really think it helps them to sleep better at night. I also get plenty of cuddle time in with the kids during the day. They seem to be happier and more relaxed at bed time.

Keeping a Clean Home – I’ll be the first to admit that trying to keep your home clean when you have a toddler and an infant is pretty hard, but I really think it is important to keep it as clean as you can. I know I always feel so much happier and relaxed when my house is clean and organized, and my kids are happier when I am happy. So, I set aside an hour every day to quickly tidy up – wash the dishes, take care of laundry, take out the trash, vacuum, wash down the table and countertops, etc. I get Kayleigh to help me with as many things as she can, and when Logan is old enough, I will get him involved too.


Getting Enough Sleep – There have been many times in my life when I would stay up until 2 or 3am, just browsing the internet or watching television, then I would wake up really early in the morning and feel absolutely lousy, and my whole day would be ruined because I had zero energy. John and I have always put the kids to bed by 7:30 at night, because we felt it was important for them to have a sleep schedule and to get enough sleep every night, but we weren’t doing that for ourselves. So, we have started to get ourselves ready for bed by 10:30pm every night, instead of staying up into the early morning hours.

It’s only mid-January, but I have Valentine’s Day on my mind already. I am a big fan of the holiday. I don’t really get all caught up in the hype of it, but I do like to have an excuse to get a little romantic with my husband and rekindle our relationship.

John and I never go out to celebrate Valentine’s Day, but we always have a really nice dinner at home that we cook together, with wine, candles, etc. We usually do something fun like play a board game and then watch a movie together. It’s so nice to spend the evening just relaxing and bonding.

I don’t usually decorate the house for the holiday, but we bought our house in May last year, and I was thinking of making some sort of decoration that I could put out year after year to celebrate that. As I was browsing Etsy, I came across a really cute Valentine’s Day sign that said “Love Lives Here” on it and I fell in love with it.

Later in the day, I went shopping at AC Moore with my sister, and as soon as I saw this unfinished wooden craft house with that little picket fence, I knew what I wanted to do with it.

Here are the supplies I grabbed from AC Moore:


  • Unfinished wooden craft house
  • Small wooden heart
  • Red heart embellishment
  • Mod Podge
  • Paint brushes of assorted sizes, including one for fine detail work
  • Apple Barrell acrylic paints in flag red, bimini blue, white and black
  • Valentine’s Day themed scrapbook paper
  • Black sharpie

The first thing I did was paint the whole house. I painted the walls in flag day red, the trim, window and pieces on the door white, the door bimini blue, and the chimney black.

Next, I measured the sections of the roof and cut out pieces scrapbook paper just a tad wider than the sections so they would overhang a little.

I glued the scrapbook paper pieces onto the roof sections with mod podge.

Next, I wrote “Love Lives Here” on the fence with a black sharpie and added a heart embellishment on the door where the knob should be.

I had painted a wooden heart white, and tried to write our last name and the year we bought our house, but I couldn’t get it to look quite right, so I printed it out on some paper and glued it onto the heart instead.

I am really pleased with how cute this little decorative house came out, and it’s something I can look forward to setting out year after year!

Both of my kids had doctor appointments last month, and I could not believe that my 10 month old son weighed more than my 2.5 year old daughter! He only outweighed her by a 1/2 pound, but still, it just amazes me that he has gotten so big, so fast!

My growing boy needs new clothes constantly it seems. He was wearing size 3 month clothes at birth, 6-9 month clothing when he was only 2 months old, and he has just been growing out of all of his clothes so quickly that I can hardly keep up!

I’ve lived in Maine my entire life, and you’d think by now that I would be used to the heavy snowfall we get every year, but I’m not. I absolutely despise snow, and have ever since I was a kid. My friends would all bundle up and head outside to play in the snow, and I would sit in my bedroom, watching TV.

Every once in a while my parents would force me to go outside to play during the winter months, thinking it would do me some good, but I would just sit on the front stairs and pout until they let me go back inside. There was nothing fun about wearing that bulky snowsuit that I could barely even move in, and freezing my behind off!

Snow is just one of those things that I do not tolerate well at all. It’s cold, wet, difficult to drive in, and worst of all, it can cancel plans I’ve been looking forward to for months, in an instant. Just the thought of snow gives me terrible anxiety.

I was pregnant with my son, Logan, all of last winter – one of the worst winters we have ever had here in Maine. We were just buried in snow last year, so much so, that we were running out of room to put it! I was 9 months pregnant at the end of February, and I was so anxious that I was going to go into labor during a blizzard. My hospital was 45 minutes away, when the roads were clear, so I was absolutely dreading a drive there during a big snowstorm.

Luckily, my son decided to come on one of the very few snow-less days we had last year. It was nothing short of a miracle!

We have only had a little bit of snow so far this year, and, thankfully, it melted away pretty quickly. I’m really hoping this winter will not be as bad as last year, but you really just never know what’s going to happen here in Maine. The weather always changes so quickly around here.

My parents live an hour away, and it’s always been so hard for me to make plans to get together with them during the winter months, especially now that I travel with my toddler and infant. I do not want to risk getting caught on the interstate in a snowstorm with them in the back seat.

I was so happy to hear about the SnowCast app for iOS, which predicts snowfall right in my area. After installing this app on my ipad, and playing around with it for a bit, I can see that it is really going to be beneficial to me during the upcoming winter months.

I love that I can turn on notifications, and the SnowCast app will notify me to let me know when and how much snow I can expect in my area. Now, I won’t have to keep checking our local news station’s website for updates. This app will make it a lot easier for me to plan get-togethers with my family, as it shows the snow forecast for the next 48 hours, in 6 hour increments.

While there is no snow in the forecast for my exact area right now, the SnowCast app did alert me to a winter weather advisory for other parts of Maine, which is really great since my parents do live an hour away. They are actually getting some snow right now, so I know now is not the time for me to travel to their house for a visit.
