These Slow Cooker Meatball Subs are so delicious! Your family will love them!

My parents watched Kayleigh for us overnight last weekend, so John and I actually had some time to relax for a while.  We’ve both been super busy and feeling under the weather for a while now, so it was a much needed break. Instead of spending lots of time and energy cooking a big meal, I decided to make some meatball subs using my slow cooker.  My slow cooker has seriously been getting a workout this fall.  I’ve had it for years now, but never really put it to much use until lately.  What was I thinking??  It’s so easy to have a warm and delicious meal ready for dinner time without putting a lot of time and energy into it, and without a lot of clean up. I can’t believe I waited so long to try making these slow cooker meatball subs!
I loved how these meatballs came out, and they were so tasty sandwiched in a toasted roll with some melted mozzarella cheese on the top.  We had some leftover sauce and meatballs, and I used them to make a yummy meatball pizza the next day too!

These slow cooker meatball subs are a perfect dinner option for a cool fall day. This recipe can easily be doubled or tripled if you’re hosting a party, too.

Slow Cooker Meatball Subs


  • 1 pound 90% lean ground hamburg
  • 4 cloves of garlic (minced)
  • 1/2 cup Italian style breadcrumbs
  • 1 egg (slightly beaten)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded Mozzarella cheese (separated) plus extra for topping if desired
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. onion powder
  • 1 24 oz. jar of Tomato Basil Marinara Sauce
  • 1 14.5 oz can of Basil, Oregano & Garlic Diced Tomatoes

Prevent a Mess in Your Slow Cooker

Heads up – this recipe will make a real mess in your slow cooker! Make clean-up a breeze with these Reynolds Kitchens Slow Cooker Liners.

These liners will hold in the heartiest ingredients without breaking or puncturing in the slow cooker. Forget soaking and scrubbing! Just throw away the liner once the meal is served, and your slow cooker will still be clean! These BPA Free liners are made of high temperature safe materials for cooking in slow cookers.


In a large bowl, mix all ingredients together, except for the marinara sauce, diced tomatoes and 1/2 cup of the Mozzarella cheese, until well combined.  Roll mixture into 1.5 inch meatballs.

Pour 1/2 jar of marinara sauce and 1/2 can of diced tomatoes into bottom of slow cooker and mix together.  Place meatballs in an even layer on top of sauce.  Cover meatballs with remaining marinara sauce and diced tomatoes.  Cover and cook on low for 6 hours.

After 6 hours have passed, remove meatballs from slow cooker with a slotted spoon and set aside.  Stir 1/2 cup of Mozzarella cheese into remaining sauce in slow cooker.  Stir until cheese has melted and sauce has thickened.

Toast sandwich buns if desired.  Fill with meatballs.  Top your slow cooker meatball subs with additional sauce and Mozzarella cheese, and enjoy!

I’m 21 weeks pregnant with my second child, and we just found out yesterday that we are having a boy!  We are so excited to add a little boy to our family!

I’m a stay-at-home Mom to my very busy 17 month old daughter, and I’m also 21 weeks pregnant with my second child.  Between cleaning up after my daughter, and the pure exhaustion that pregnancy itself causes, I don’t really have a lot of time or energy to keep up with a full daily beauty routine.  I’m lucky if I can squeeze in a quick shower most days!

Since we don’t leave the house very often, I pretty much live in my yoga pants all day, and don’t bother putting on any makeup.  When 4:30 in the afternoon rolls around, however, I get excited because I know John is about to come home from work soon.  I like to look a bit more refreshed and like less of a slob when he gets home from work (gotta keep that spark alive, right??), so I quickly do a few things that improve my appearance and help me feel better about myself.  It’s what I call my 10 Minute Beauty Routine

10 Minute Beauty Routine for Busy Stay at Home Moms

  • First, I comb out my hair and if necessary, pass the hair straightener through it a couple of times to tame any out of control pieces of hair. 
  • Next, I wet a washcloth with hot water and lay it over my face for a few seconds.  This helps to unclog my pores and make me feel refreshed.  I quickly rub some moisturizer into my skin, put on mascara, a bit of blush on my cheeks, and my favorite lipstick.  While I don’t really have time to do full makeup, I think these 3 items really help my face to look brighter and they make me feel better about myself. 
  • Next, I wash my feet with a hot wash cloth.  I’ve been stepping in crumbs left on the floor by Kayleigh all day, so they’re not really feeling so clean. 
  • I slap on another layer of deodorant, brush my teeth and spray some of my favorite perfume. 
  • Finally, I throw on a new pair of clothes, and I’m done!  It’s amazing how much better I feel after this quick 10 Minute Beauty Routine, and it really is so easy to fit this into my day.

On the days when I actually do get a chance to shower (don’t worry, I do aim to shower at least every other day, even if I have to do it at night while Kayleigh is asleep), I use Suave products.  Not only do they make me look and feel great, but I can buy them at Walmart for a great price!  Paying reasonable prices for products I love is one more thing that keeps this stay at home Mom feeling good!

Your family will absolutely love this easy slow cooker stuffed peppers recipe!

I have been on a slow cooker kick for the past couple of weeks.  Pretty much every night, I have made something for dinner in my slow cooker.  It’s so easy to throw a bunch of ingredients in while Kayleigh naps in the morning, and then by the time John gets home from work, we have an amazing meal waiting for us, with very little clean up!  I also get to sit here and smell whatever’s cooking all day, which is pretty awesome I must say. This post contains affiliate links, and I may receive compensation if you make a purchase after clicking on my links.
Today, I made stuffed peppers in the slow cooker.  This was actually the very first time I have ever had stuffed peppers.  Can you believe that?!  And, wow, have I ever been missing out!  This easy slow cooker stuffed peppers recipe is definitely going in the vault for future reference!  Just look at all that beautiful stuffing…mmmm!

Here’s how you make these delicious and easy slow cooker stuffed peppers:

Slow Cooker Stuffed Peppers

This easy slow cooker stuffed peppers recipe was inspired by The Recipe Critic.


6 Large Bell Peppers (I like to use an assortment of colors)
1 pound 90% lean ground beef
½ cup onion, diced very finely (unless you like chunky onions in your meal – I don’t)
1 14.5 oz can diced tomatoes
1 cup instant white rice
1 cup beef stock
3 cloves of garlic, minced
1 teaspoon Italian Seasoning
1 teaspoon salt
1 teaspoon pepper
1½ cup shredded Sharp White Cheddar cheese, divided
¼ cup grated Parmesan cheese
¼ cup water

  1. In a small pot, bring beef stock to a boil.  Turn stove burner off, add instant rice to beef stock, cover and set aside.
  2. Cut off the top of each pepper, pull out any remaining stem and scrape out the seeds and membranes.  Set aside.
  3. In a large bowl, combine ground beef, rice, diced tomatoes, onion, garlic, Italian seasoning, salt, pepper, 1 cup of Shredded Sharp Cheddar cheese and grated Parmesan cheese.
  4. Stuff each pepper with ground beef mixture.
  5. Pour 1/4 cup of water into bottom of slow cooker and place peppers on top.
  6. Cook peppers on low for 6 hours, or high for 4 hours, until peppers are tender and ground beef is cooked through.
  7. About 15 minutes before peppers are done, sprinkle remaining shredded cheese on top to melt.

Poke cakes are really easy to make, and they come out super moist and delicious.  I made this poke cake earlier today, and it’s already half gone!  Here’s what you’ll need to make it: 4 cups of TruMoo Orange Scream milk, 2 3.4 oz boxes of instant vanilla pudding mix, 1 box yellow cake mix (plus ingredients listed on box to make), 1 small container of Cool Whip, and 1 orange.

To make this Orange Scream Poke Cake, simply bake a yellow cake mix according to the instructions on the box.  Allow the cake to cool for a few minutes after you take it out of the oven.  Then, using the end of a wooden spoon, poke holes all over the cake.  Make sure you poke them all the way down to the bottom of the pan.

Next, make the pudding by combining 4 cups of Orange Scream milk with 2 boxes of instant vanilla pudding.  Let the pudding sit for just a couple of minutes until it sets up, then pour it all over the cake, making sure to fill the holes up with the pudding.

Spread the pudding evenly over the surface of the cake.  Refrigerate the cake until cooled.

Once the cake has cooled down, spread Cool Whip evenly over the top.

My toddler is a picky eater and I’m worried that she is not getting enough nutrients. That’s why I was thrilled to try out Enfagrow as part of this sponsored post program.
