I sure do love an easy meal idea, and this one is a great one!  This Shrimp & Spinach Pasta in a Garlic Cream Sauce is creamy, hearty, and so delicious, but more importantly, it’s super easy!

Shrimp & Spinach Pasta in a Garlic Cream Sauce

I started this recipe off by cooking a package of Gorton’s Frozen Shrimp Scampi in a deep skillet.

Once the shrimp was cooked through, I added a combination of cream cheese and sour cream, shredded Parmesan cheese and some frozen spinach.  While that was all cooking up together, I boiled my pasta, and then combined it all together to create this amazing meal!

Shrimp and Spinach Pasta in a Garlic Cream Sauce

INGREDIENTS:

  • 1 Package of Gorton’s Frozen Garlic Butter Shrimp Scampi
  • 1/2 Cup Sour Cream
  • 1/2 Cup Cream Cheese (softened)
  • 2 Cups Frozen Cut Leaf Spinach
  • 1/2 Cup Shredded Parmesan Cheese
  • 2 Cups Egg Noodles

DIRECTIONS:

  1. Cook shrimp scampi in a deep skillet, according to package directions.
  2. Cook pasta according to package directions.
  3. Meanwhile, combine sour cream and cream cheese in a small bowl.
  4. When shrimp scampi is done cooking, add cream cheese mixture and Parmesan cheese, and stir until well combined.
  5. Add spinach to shrimp mixture, and continue cooking on medium-low heat until spinach is cooked through.
  6. Drain pasta and add to shrimp mixture, stir until well combined.
  7. Serve with a sprinkle of Parmesan cheese on top.

  4. You had me with the words EASY, SHRIMP and PASTA! One question (sorry if it sounds stupid, but I am not the best cook in the world)… did you thaw and drain the spinach first, or add it in frozen?

  6. How many people does this serve?

    • I don’t remember exactly Morgan, because I ate it myself over the course of a few days, but I think you could easily serve 4 people with it as a side dish, or 2 as a main dish.

  7. Just made this tonight. I doubled the recipe so we would have leftovers. The only thing I changed was using fresh spinach and I finished it with a squeeze of lemon. Very good! I used a few spoonfuls of the pasta water to thin out the sauce as it was very thick and it’s very rich too. Served with garlic bread and cooked peas….yum! Thanks for this extremely quick, delicious recipe!
