John and I drink a lot of coffee, and we have recently started to drink a lot of tea too.  Having a Keurig makes it easy to brew a cup whenever we want, and we certainly take advantage of that!  It’s been such a long, cold winter here in Maine, and we love to stay warm inside with a delicious hot cup of coffee or tea, several times a day.

I love to eat oatmeal for breakfast, but some times it can get a little boring.  I’ve recently been looking for ways to spice up my oatmeal a bit. Did you know that you can infuse oatmeal with tea??  I never knew this, but now that I do, I’m going to experiment with several different tea flavors.  

Tea has so many great health benefits, and it’s a really excellent way to flavor your oatmeal, without adding a bunch of sugar.  

Today was my first time trying tea infused oatmeal.  I had a box of Yogi Sweet Tangerine Positive Energy Tea. Not only does it taste great, but it supports elevated mood and energy levels, too.  What a great way to start the morning!

Sweet Tangerine Tea Infused Oatmeal

Infusing your oatmeal with tea is really quite simple.  Here’s how you do it:

INGREDIENTS:

  • 2 Bags of Tea
  • 2 Cups of Water
  • 1 Cup of Quaker Oats

DIRECTIONS:

  1. Bring the water to a boil in a medium saucepan.
  2. Remove from heat, add tea bags and allow to steep for a few minutes.
  3. Remove tea bags and add oatmeal, stir.
  4. Return pot to the burner and bring to a boil.
  5. Reduce heat and simmer, stirring occasionally, until oatmeal reaches desired consistency.

Prior to becoming a stay-at-home Mom, I worked as a Paralegal for a law firm for more than 10 years.  Most of the time, it was a very fast-paced, and overwhelming job.  One of the hardest things for me, was finding a work-life balance.  Even when I wasn’t at work, I was thinking about it, or bringing it home with me.  It didn’t help matters that I wasn’t really satisfied with my job.  It helped to pay the bills, but I wasn’t happy.  When something is making you unhappy, you can’t stop thinking about it.

I thought that I would be able to relax a little, and find more balance in my life after I became a stay-at-home Mom, but that hasn’t been the case.  I am much happier with what I am doing these days, but I’m still stressed out.  I have been working on building up my blog, and it often times feels like it has taken over my life.  In between diaper changes and feedings, I’m checking e-mails, applying for opps, writing posts, taking photos, checking in on my social media accounts, etc.  I can’t even cook a meal without it turning into a blog post most days.

After Kayleigh’s gone to bed, again, I find myself glued to the computer, when what I’d really like to do is spend more time with John.  It’s so hard to shut my mind off from work, and only focus on my life at home.  I really need to find more balance, so that I can pursue my dream, but also spend quality time with my family.  Life is too short to just let it pass you by!

While John and I are getting by on only his income, and the small income I get from blogging right now, it’s always in the back of my mind that I may have to re-enter the work force at some point.  Just the thought of that scares me.  I haven’t worked outside of the home since March of last year, and I feel very out of touch already.  It would be a huge adjustment for me to go back to work at this point, and even just the process of finding a job would be difficult.

Back in 2009, a fire broke out in the small law office I was working at.  Luckily, everyone was able to get out in time and there were no injuries.

It was the first time I had ever experienced a fire, and it was incredibly scary.  I could not believe how fast the fire spread.  The receptionist and I originally just smelled smoke, then a moment later we saw it rolling up from the floor, and a very short time after we all got outside, we saw roaring flames through the windows.

We felt so hopeless as we watched the fire fighters try to put out the blaze.  We just stood there in the cold, hearts heavy, lumps swelling up in our throats, holding onto hope that our office, and important client files, would not be a total loss.  

Luckily, the fire was contained to one room in the office, and even though there was a thick layer of smoke residue covering the entire office, we didn’t lose any important client information, or any of our computer equipment.    

The three tenants living underneath our apartment weren’t as lucky, however.  Their apartments were housed under that one room in our office, and in addition to damage from the fire itself, most of their belongings were ruined by the water used to put out the fire.

Two of the tenants were college students, and the third was an older man who didn’t have a lot of money.  They were all displaced from their homes for several months, as our office, and their apartments, were cleaned and renovated.  

Thankfully, the American Red Cross was there to help them find temporary housing, and also to assist them with their basic needs, such as food and water, and clothing.  We are so fortunate to have such an amazing organization to help people in their time of need.  

We later found out that the fire had started from one of the electrical wires in the ceiling of one of the efficiency apartments below our office.  It was not caused by anyone being careless or negligent.  It was something that could not have been prevented.  

Being in a fire like that really made me become more aware of how fragile everything is.  In just the blink of an eye, everything important to you could be destroyed and lost forever.  I don’t know what we would have done if all of our important client information had been destroyed.  It would have been a nightmare.

There are many things in my own home that are so important to me, and I would be incredibly upset if I were to ever lose them.  There are many pictures of my friends and family, Kayleigh’s baby book and keepsakes, the wooden clarinet my grandfather played through high school, and that I played for 8 years, the silver that my Nana received on her wedding day and gave to me several years ago.  We also have two cats that are part of our family.

I sure do love an easy meal idea, and this one is a great one!  This Shrimp & Spinach Pasta in a Garlic Cream Sauce is creamy, hearty, and so delicious, but more importantly, it’s super easy!

Shrimp & Spinach Pasta in a Garlic Cream Sauce

I started this recipe off by cooking a package of Gorton’s Frozen Shrimp Scampi in a deep skillet.

Once the shrimp was cooked through, I added a combination of cream cheese and sour cream, shredded Parmesan cheese and some frozen spinach.  While that was all cooking up together, I boiled my pasta, and then combined it all together to create this amazing meal!

INGREDIENTS:

  • 1 Package of Gorton’s Frozen Garlic Butter Shrimp Scampi
  • 1/2 Cup Sour Cream
  • 1/2 Cup Cream Cheese (softened)
  • 2 Cups Frozen Cut Leaf Spinach
  • 1/2 Cup Shredded Parmesan Cheese
  • 2 Cups Egg Noodles

DIRECTIONS:

  1. Cook shrimp scampi in a deep skillet, according to package directions.
  2. Cook pasta according to package directions.
  3. Meanwhile, combine sour cream and cream cheese in a small bowl.
  4. When shrimp scampi is done cooking, add cream cheese mixture and Parmesan cheese, and stir until well combined.
  5. Add spinach to shrimp mixture, and continue cooking on medium-low heat until spinach is cooked through.
  6. Drain pasta and add to shrimp mixture, stir until well combined.
  7. Serve with a sprinkle of Parmesan cheese on top.

My favorite product in this line is the Head-to-Tail Baby Wash.  It’s very gentle on Kayleigh’s sensitive skin, and smells amazing!  I accidentally got a bit of the soap in her eye during her last bath, and after the initial shock of it, she was just fine.  The soap did not irritate her eye at all.  This baby wash leaves her hair and skin feeling so soft and smooth, and I just love snuggling up with her after her bath, and breathing in the soothing scent of the baby wash in her hair. 

Head-to-Tail Baby Wash is made with ultra-emollient and super gentle organic aloe vera; soothing calendula and chamomile; and anti-oxidant olive oil.

After Kayleigh’s bath, I give her a little massage, and rub the Body Creme into her skin.  There are many benefits to baby massage, including boosting muscle development and easing tummy troubles and teething pains, and is also a great way to bond with your baby.

This body creme also smells great, and makes her skin even softer.  I love that it doesn’t feel heavy or greasy.  It soaks into her skin very well. It is made with ultra-emollient and super gentle organic aloe vera, organic coconut oil and grapeseed oil as well as soothing Roman chamomile.

John bought me a KitchenAid Mixer for Christmas, and I really could not have asked for a better gift.  I have secretly been wanting one for years now, but never asked for one because they are a bit on the expensive side. I am so lucky to have a husband that knows exactly what I want, without me having to ask for it. He always buys me the best gifts!

I’ll admit, when I first opened my gift, I was taken aback and actually felt really guilty. I knew he probably spent a lot of money on it, even though he claims that he got it on sale and was able to use a coupon to drop the price down by quite a lot. Now that I’ve had it for a while, though, I feel like it was definitely a great investment. I use my KitchenAid Mixer all the time. It makes baking so much easier!

One of my very favorite things in this world is sour cream.  It’s so thick and creamy, and adds a smooth, slightly tart flavor to anything.  We go through about 2 containers of it per week, at least, because I put it on everything.

From potatoes to Mexican food, to making dips with it, and even baking cakes with it, sour cream can be used in so many dishes. And hey, if you ever screw up a recipe, throw some sour cream on top of it, and no one will be any wiser!  Everything tastes better with sour cream!

You may recall the recipe I recently shared for Company Casserole, and a recipe I shared a while ago for Macaroni & Shrimp Salad that both feature sour cream as a main ingredient.  It’s no surprise that these are two of my favorite recipes. 

Now, I have a third recipe to add to that collection of great recipes that feature sour cream as a main ingredient – Creamy Spinach Artichoke & Chicken Lasagna.

Creamy Spinach, Artichoke & Chicken Lasagna

We have always purchased Hood sour cream in this house.  Hood is a New England company, founded in Charlestown, Massachusetts in 1846!  We live in Maine, so we love to support locally owned companies like Hood, by purchasing their products, which include sour cream, ice cream, milk, cottage cheese and more.  The quality of their products is always exceptional, and their prices are very reasonable as well.  They’ve been around for a very long time, so you know their product has to be THE BEST.

I was recently asked to create a winter  meal recipe using Hood sour cream as a main ingredient.  Oh, what a dream come true for this girl!  Of course I was up to the challenge!

As I was racking my brain for ideas, John suggested I make a Spinach & Artichoke Dip.  I love a good Spinach & Artichoke Dip, but I didn’t really think it was hearty enough to be considered a winter meal.  

A few minutes later, I had an “ah ha!” moment, and landed on the idea of a Spinach, Artichoke & Chicken Lasagna.  It would be very similar to a Spinach & Artichoke Dip, but I would add chicken, and some garlic, of course.  And, since it was in lasagna form, it would certainly be hearty, and a great winter meal option.

Creamy Spinach, Artichoke & Chicken Lasagna

This Spinach, Artichoke & Chicken Lasagna was sooo good.  John and I each ate two pieces for dinner.  We just couldn’t help ourselves.  The combination of the cream cheese, sour cream, Parmesan and Mozzarella makes a great base for the garlic, spinach, artichoke and chicken.  It all just blends together so wonderfully. 

I have always been a huge fan of lasagna in general, but the traditional kind of lasagna is so heavy, and heartburn inducing.  This is not.  There is no red sauce, beef or sausage in it to cause heartburn, and it’s loaded with spinach and white meat chicken, so it’s really light and easy on the tummy.

Here are the directions so you can make this delicious meal for your family too!

Creamy Spinach, Artichoke & Chicken Lasagna 

INGREDIENTS:

  • 1 16 oz. Bag of Cut Leaf Frozen Spinach
  • 2 Cups Shredded Mozzarella (divided in half)
  • 1 8.5 oz. Can of Artichoke Hearts
  • 1 8 oz. Container of Cream Cheese (softened)
  • 1/2 Cup Shredded Parmesan Cheese
  • 1 Cup Hood Sour Cream
  • 2 Large Cloves of Garlic (finely chopped)
  • 2 Cups Cooked Chicken (cubed)
  • 8-10 Lasagna Noodles
  • Salt and Pepper to Taste

DIRECTIONS:

  1. Cook lasagna noodles according to box, until al dente.
  2. Meanwhile, in a large skillet, cook garlic in a generous splash of olive oil, over low heat, for 2-3 minutes.  Add cooked chicken and frozen spinach and turn heat up to medium-low.  Cook until spinach is thawed, stirring occasionally. 
  3. Rough chop the artichokes.
  4. In a medium bowl, mix sour cream, cream cheese, Parmesan cheese and salt and pepper.  
  5. Stir in garlic, chicken and spinach mixture until well combined.
  6. Fold in artichokes and 1 cup of Mozzarella cheese.
  7. Cover the bottom of a 9×9 square baking dish with a small amount of the spinach, artichoke and chicken mixture.  
  8. Layer 4-5 lasagna noodles on top of mixture. 
  9. Layer 1/2 of the remaining spinach, artichoke and chicken mixture on top of the lasagna noodles. 
  10. Layer 4-5 more lasagna noodles. 
  11. Layer the remaining spinach, artichoke and chicken mixture on top of the lasagna noodles.
  12. Sprinkle remaining Mozzarella cheese on top. 
  13. Cover lasagna with foil and bake at 350 degree preheated oven for 30 minutes.
  14. Remove foil from lasagna and continue baking for 10 minutes until top layer of cheese has melted and browned around the edges.

John and I have always taken a more natural approach to parenting Kayleigh.  We buy her organic food, have her on a delayed vaccination schedule, use scent and dye-free laundry detergent, natural baby soap and lotions, and always buy all natural medications for teething, colds, etc.  We think it’s really important to watch everything that goes into her little body, and avoid harsh chemicals whenever possible.

Valentine’s Day is coming up very quickly.  I don’t really have a lot of spending money now that I’m a stay-at-home Mom, so I thought I’d get a little creative with John’s Valentine’s Day gift this year and bake something yummy for him.  The way to a man’s heart is through his stomach, right?!  

John is a huge fan of Crown Royal Whiskey.  That, mixed with a splash of ginger ale, is his drink of choice.  Around Christmas time last year, we bought a bottle of Crown Royal Maple Flavored Whiskey.  Neither one of us had tried it yet, and we were intrigued. We were pleasantly surprised by how good it is.  The maple scent and flavor of this whiskey is wonderful.  It kind of tastes like a pancake!

We were getting down to the end of the bottle, and I wanted to try making a pound cake with it before it was completely gone.

Maple Whiskey Pound Cake

I searched through a lot of pound cake recipes, trying to find one that I could easily adapt, and I finally settled on a recipe for a Sunny Orange Pound Cake Loaf from At the Corner of Happy and Harried.  I hoped that I could just swap out the orange ingredients for maple and come up with a delicious Maple Whiskey Pound Cake.  I had my fingers crossed that I wasn’t about to waste good liquor on something that didn’t turn out well.

As I mixed the pound cake ingredients together, the maple aroma was so amazing.  I couldn’t resist taste-testing the batter.  It was absolute heaven.  I had to stop myself from eating it.  There is, after all, raw eggs in it.  So, the batter tasted fantastic, but how would it taste after it was baked?

Maple Whiskey Pound Cake

It was INCREDIBLE!  This Maple Whiskey Pound Cake was so moist and full of delicious maple flavor.  The sticky syrup poured over the top of the pound cake was sweet, with a little bit of a Whiskey bite to it.

I ate two pieces and had to stop myself from eating more.  Look at that pool of gooey syrup in the middle there.  Mmmm.   It goes wonderfully with a cup of coffee!

Maple Whiskey Pound Cake

INGREDIENTS:

For the cake (Makes one 9″ loaf cake)

  • Butter – 1/2 cup, softened
  • Sugar – 1 cup
  • Eggs – 2, large
  • Maple syrup – 1 tbsp
  • All purpose flour – 1 1/2 cups
  • Baking powder – 1/4 tsp
  • Baking soda – 1/4 tsp
  • Salt – 1/2 tsp
  • Crown Royal Maple Flavored Whiskey – 1/2 cup
  • Milk or buttermilk – 1/4 cup
  • Vanilla extract – 1/2 tsp

For the Maple Whiskey syrup

  • Maple Syrup – 1/4 cup
  • Sugar – 1/4 cup
  • Crown Royal Maple Flavored Whiskey – 2 tsp

DIRECTIONS:

  • Pre-heat the oven to 350 deg.F. Grease and flour a 9 x 5 loaf pan thoroughly or line with foil.
  • Cream butter and sugar together until fluffy. Add eggs and maple syrup and beat well.
  • Sift the dry ingredients together in a bowl. Combine the Maple Flavored Whiskey, milk/buttermilk and vanilla extract in another.
  • Add the flour mixture and Maple Whiskey mixture to the batter alternately, beginning and ending with the flour mixture.
  • Spoon into the prepared pan, smooth the top (batter will be thick) and bake for 40-45 minutes or until it passes the toothpick test. Check the cake at 30-35 minutes. If the top seems to be browning too rapidly, tent with foil and bake until done.
  • For the Maple Whiskey syrup: A few minutes before the cake is done baking, prepare the syrup by heating the maple syrup, Maple Flavored Whiskey and sugar in a saucepan over low heat for a few minutes, until sugar has dissolved and mixture has thinned out a bit.   Stir continuously to prevent it from sticking to the pot.
  • Poke holes all over the top of the pound cake with a toothpick and pour Maple Whiskey syrup mixture over the top.  Spread evenly over pound cake with a knife.  Allow cake to cool completely before slicing.
