The sun has been shining here in Maine all week, and the temps have been toasty warm. After a very rough winter season, I’m in heaven! All this nice weather has me craving summer foods – bbq, corn on the cob, lobster… the list goes on and on.
One dish that I have been craving in particular (thank you 39 weeks of pregnancy!), is Macaroni & Shrimp Salad. My fiance introduced me to this family recipe a few years ago, and during the summer months, I can’t seem to get enough of it! I’ll eat leftovers of this Macaroni & Shrimp Salad for days on end, and normally I am completely anti-leftovers.
